The Etna Rosso di Tornatore is made from Nerello Mascalese and Nerello Cappuccio grapes grown on the northern slope of Etna, in the territory of the municipality of Castiglione di Sicilia (CT). After the harvest, which takes place in the second and third decades of October with a yield of 70 quintals per hectare, the grapes are transported to the winery where they undergo further selection and are prepared for vinification. The alcoholic fermentation with must maceration in contact with the skins takes place in cement tanks for 10/12 days at a controlled temperature of 22/25°C. At the end of the process, the maceration continues for a few more days before racking and pressing. Before commercialization, the Etna Rosso di Tornatore is aged for 6 months in large wooden barrels and for an additional 3 months in the bottle.
ETNA ROSSO TORNATORE: THE TASTING
The Etna Rosso di Tornatore presents itself in the glass with a light ruby red color. On the nose, it releases aromas of marasca, sour cherry, and small forest fruits intertwined with floral hints of violet and subtle notes of black pepper and dark spices. The taste is full and harmonious, enhanced by a smooth tannic structure and a gentle freshness combined with a pronounced minerality that lingers in the finish. At the table, it pairs well with cured meats and aged cheeses as well as with succulent land-based recipes featuring vegetables, red meats, or game.
