Villa Russiz's Sauvignon De La Tour was obtained from 100% Sauvignon grapes grown in the Capriva del Friuli area, in the province of Gorizia, on hilly marly soils, mainly exposed to the north-east. After the manual harvest, the grapes were transported to the cellar to be subjected, in their entirety, to soft pressing. The alcoholic fermentation, which transforms sugars into alcohol, took place at a controlled temperature. Before bottling, the Sauvignon Collio DOC De La Tour 2019 by Villa Russiz was refined for 10 months on the fine lees, i.e. the residues of fermentation, enriching itself in terms of body, aromas and substances.
SAUVIGNON DE LA TOUR VILLA RUSSIZ: THE TASTING
The Sauvignon of Villa Russiz presents a straw yellow color with greenish reflections. On the nose it expresses aromas of peach and tropical yellow fruit which combine with hints of elderberry and white flowers and delicate vegetal and citrus notes. The sip is soft and elegant, enhanced by a delicate freshness and a strong minerality that persists in the long finish. At the table it goes well with semi-mature cheeses as well as vegetarian dishes and tasty seafood recipes based on white fish, molluscs and crustaceans.
