The Santico Amarone by Santi is made from Corvina and Rondinella. The production is traditional: drying of the grapes involves manual harvesting and resting in plateaux of 6 to 7 kg inside dry and well-ventilated rooms. The grapes are kept in the drying rooms for 3-4 months, constantly monitored, until they lose about half of their weight through water evaporation, reaching the desired concentration of sugars. During this phase, a series of complex transformations occur in the grapes, such as an increase in total acidity but a decrease in malic acid to the point of near disappearance, a change in the ratio of glucose to fructose, concentration of polyphenols, a significant increase in glycerin, and the formation of many other substances, especially aromatic ones. The drying phase is followed by crushing and winemaking. Aging is carried out for 24 months in large barrels made from local woods, such as cherry, chestnut, and to a lesser extent acacia.
AMARONE SANTICO SANTI: TASTING
The Santico Amarone from Valpolicella has a beautiful deep garnet color. On the nose, it offers dark fruit in jam, undergrowth, cinchona, rhubarb, leather, hints of smoky and metallic notes, and resinous and ethereal echoes. On the palate, the alcoholic strength is softened by freshness and tannins, and the finish plays between savoriness and dark balsams. Excellent with pork shank.
