Villa Russiz's Pinot Grigio was produced with 100% Pinot Grigio grapes grown in the Capriva del Collio area, in the province of Gorizia. The original vineyards, with south, east and west exposure, insist on completely marly soils. The grapes were harvested by hand in the coolest hours of the morning and transported to the cellar where they were completely subjected to soft pressing. The free-run must - i.e. the product of the first pressing - is decanted into stainless steel tanks where the alcoholic fermentation has taken place which has transformed the sugars into alcohol. Before bottling, Villa Russiz's Pinot Grigio Collio DOC 2020 was refined for 8 months on the fine lees (the residues of fermentation), enriching itself in terms of substances, body and aromas.
PINOT GRIGIO VILLA RUSSIZ: THE TASTING
The Pinot Grigio of Villa Russiz appears straw yellow in the glass. On the nose, aromas of peach, pear and yellow pulp fruit emerge which are intertwined with clear hints of wild flowers. The sip is pleasant and elegant, enhanced by a delicate freshness and a strong minerality that persists in the finish. At the table it pairs well with cheeses and vegetarian dishes as well as delicious seafood recipes based on white fish, molluscs and crustaceans.
