The Cannellino di Frascati by Fontana Candida is the technically modern interpretation of the legendary sweet wine of the capital. Born more probably due to space management needs than choice, it was the result of grapes harvested at the end of October, slightly botrytised, for which the first cold temperatures of November blocked fermentation, leaving a strong sugary residue. This type of sweet wine was initially included in the Frascati Doc in 1966, and then saw its identity recognized with the awarding of the Docg in 2011. The production area of the grapes includes the entire administrative territory of the municipalities of Frascati, Grottaferrata, Monte Porzio Cato, and partly those of Rome and Montecompatri. The varieties used by Fontana Candida are Malvasia Bianca di Candia, Trebbiano and Malvasia del Lazio; the soils are of volcanic origin, permeable, dry and not arid, typical of the area. Vinification and brief aging take place entirely in steel.
CANNELLINO DI FRASCATI FONTANA CANDIDA: THE TASTING
Fontana Candida's Cannellino di Frascati is intense straw yellow; on the nose it smells of white and yellow pulp fruit, with notes of acacia honey and wisteria flowers. On the palate it is in line with the olfactory profile, soft and sweet, with a moderately acidic and savory evolution. How delicious with sugar-dusted donuts and St. Joseph's pancakes!
