Antinori's San Giovanni Della Sala Orvieto Classico Superiore Castello della Sala was produced from Grechetto (50%), Procanico (25%), Viogner and Pinot Bianco (25%) grapes grown on the Castello della Sala estate, located between Mount Nibbio and the Paglia river, in Ficulle (TR). After the harvest, the grapes were vinified separately by type. A part of the must was subjected to cold maceration, remaining in contact with the skins for approximately 6 hours at a temperature of 10°C. The alcoholic fermentation, which converted the sugars into alcohol, took place in stainless steel tanks at a controlled temperature of 16°C; the refinement always took place in stainless steel for a few months in contact with the yeasts, in order to enrich the body and aromatic profile of the wine. The bottling of Antinori's San Giovanni Della Sala Orvieto Classico Superiore Castello della Sala was carried out immediately after the assembly of the four single-varietal lots.
SAN GIOVANNI DELLA SALA CASTELLO DELLA SALA ANTINORI: TASTING
The San Giovanni Della Sala Orvieto Classico Superiore Castello della Sala by Antinori appears in the glass of a straw yellow color with greenish reflections. On the nose, intense aromas of peach, pineapple and ripe tropical yellow fruit emerge which combine with fragrant hints of wild flowers and delicate vegetal notes. The sip is rich and pleasant, supported by a vibrant freshness and a clear minerality that persists in the finish. At the table it pairs well with semi-mature cheeses as well as vegetarian dishes and tasty seafood recipes based on white fish, molluscs and crustaceans.
The Antinori Family has been dedicated to wine production for more than six hundred years: from when, in 1385, Giovanni di Piero Antinori became part of the Florentine Art of the Vinattieri. Throughout its long history, through 26 generations, the family has always managed this business directly with innovative and sometimes courageous choices but always maintaining respect for traditions and for the territory.
